Burton McMahon D’Aloisio Chardonnay 2017

The fruit is hand-picked to insure only clean, healthy bunches are selected. We then whole bunch press, and settle the juice overnight in tank. This is followed by a light racking directly to barrel (approx. 95% solids), where natural fermentation takes place. MLF is not encouraged and wines are sulphured directly after primary. The wines are then matured for 10 months in 30% new (225 – 500L) French oak barrels.

"Clone I10V1, hand-picked, whole-bunch pressed, fermented and matured in French oak (25% new) for 10 months. Pale, bright straw-green; faintly nutty/toasty oak joins white peach and green apple on the bouquet, the palate opening with a reprise of the bouquet before it expands dramatically on the finish, thence to a sorbet-like aftertaste.
