Burton McMahon D’Aloisio Chardonnay 2019

The fruit is hand-picked to insure only clean, healthy bunches are selected. We then whole bunch press, and settle the juice overnight in tank. This is followed by a light racking directly to barrel (approx. 95% solids), where natural fermentation takes place. MLF is not encouraged and wines are sulphured directly after primary. The wines are then matured for 10 months in 30% new (225 – 500L) French oak barrels.

    ‍A partnership between Hunter-based Matt Burton (of Gundog fame) and Dylan McMahon, the winemaker at Seville Estate. This single vineyard chardonnay is made with Burgundian practices - whole bunched picked, full solids ferment with indigenous yeasts. The malolactic fermentation is inhibited to preserve the wine’s bright acidity. It’s this citrus fresh acidity that defines the palate with buoyant aromas of white peach and honeydew melon and an intriguing textural richness.

    2019 has provided some very good releases from a couple of Australia’s best young winemakers. The grapes were sourced from the D’Aloisio vineyard in upper Yarra and speaks of the cool site with with elegance and structure to white stone fruits that have a citrus edge. The wine builds with subtle mealy / nutty texture and impact of spiced oak. There is a saline and citrus focus to finish that is tempered by white peach, a long future ahead for this wine.

    Tight, white peach, almond and ripe grapefruit with a little struck match. It’s firm, plenty of grapefruit tang, a slight bitter pith character, fine acidity, and a gently savoury, spicy oatmeal finish of excellent length. Nice.
